Originally, only a very few homebrewers used any type of filtering and 99.9% of homebrew was bottle conditioned beer, and very well fit the CAMRA definitions. Since then we have increasingly filtered beer, and used counter pressure bottle filling instead of bottle conditioning; has this made our beers "unreal?" No, we have only advanced our technology. We have never truly held firm the CAMRA definitions of real beer, meaning live beer. To use the oft cited examples of Standard American lagers; there is still a large gap between the factory (unreal) and the homebrewed versions. Homebrewers are not using cooker-zyme, not using beta- glucanase, adding amylase to the mash to ensure/expedite conversion. Homebrewed versions still are not pasteurized, and sterile filtered. The homebrew still remains a live product thereby nebulously clinging to the original expectations of "real" beer. ---------------------------------------------------------------------- ***** Important Subscriber Information ***** To post a message to JudgeNet, send it to judge`at`synchro.com.
