Saison Gravity ---------------------------------------------------------------------- From: Mike Dixon Date: Tue, 15 Mar 2005 18:48:16 -0500 Subject: Saison Gravity Normally I skip the questioning about a particular style on JudgeNet but I noticed several people talking on another forum about how dry Saisons finish. As I normally do, I went to the style guidelines http://www.bjcp.org/styles04/Category16.html#style16C and I see an OG of 1.048 - 1.080 and an FG of 1.010 - 1.016. With and OG of 48 and an FG of 10, the AA is ~80%. That runs afoul of the latest Farmhouse Ales book by Markowski which suggests an AA of 90-95% AA (p121) and then later he mentions FG in the range of 1.002-1.008 and AA of 85-90% (p138). I know that my own Saison recipe finished about 1.012 (84% AA) and should have been a bit hoppier in the long run, but I was trying to emulate the style guidelines at the time http://www.bjcp.org/styleguide19.html and Rajotte's suggestions in Belgian Ale. I guess the question is do the guidelines for Saison need a second look in terms of FG? I have not fully read Farmhouse Ales, but wanted to see what others knew of the style.
