You can plug in 4 grains and 3 hops. You can now put in grain types and SRM number as well as efficiency numbers(see the Data page - it is the little tab at the bottom of the "Main" page) . This lets you formulate all grain and extract recipes for all styles. You can also put in Kettle efficiency and see what it looks like charted (the Kettle tab). You can tell the spread sheet to create "Extreme" recipes by putting 120% in each of the ratio fields. I have also written a new spread sheet that takes a recipe and tells you what BJCP style category it fall under. You can enter 12 different grains and/or extract type and 6 different hop types. It take the range of a prameter and tells you where in that range your recipe will fall or if you are out side the range or not. It will also color the cell so you can get a quick visual of what styles your recipe might be entered into. It is called StyleFinder.xls. You need to have MS Excel to use these. Question: Steve, just to help me along, suppose the guidelines call for an OG of 1.045 to 1.055. 1) If my recipe indicated 1.060 OG, what would the red percentage show up as? 2) If my recipe indicated 1.050 OG, what would the green percentage show up as? 3) If my recipe indicated 1.040 OG, what would the yellow percentage show up as? Answer: The formula I used to calculate the percentages was - Ratio = (Calculated - Low end)/(High end - Low end) (High end - low end) is always positive If Calculated equals low end then Ratio is 0% (0) (Green) If Calculated equals high end then Ratio is 100% (1) (Green) If Calculated between High end and Low end then Ratio between 0% (0) and 100% (1) (Green) If Calculated is less than Low end Ratio is a negative value (Yellow) If Calculated is more than High end Ratio is a value over 100% (greater than 1) (red) So for a guideline with 1.055 = High end and 1.045 = low end (High end - Low end) is 0.010 If Calculated = 1.060 then we have 1.060 - 1.045 = 0.015 which implies 0.015/0.010 = 1.5 The cell will read 150% and be colored red. If Calculated = 1.050 then we have 1.050 - 1.045 = 0.005 which implies 0.005/0.010 = 0.5 (50%) The cell will read 50% and be colored green. After some long contemplation, I feel compelled to provide critique on the BJCP scoresheets, especially if this is how the powers that be consider this an effective example of the way to describe beer. Preamble: When I judge a beer, I note everything that I can get: good, bad or otherwise. In this manner I can pick up a score sheet months or years from now and "know" what that beer was all about. This implies that I have good comprehension of my palate and command of my descriptions. #1 APA On Aroma: Cut to the chase and just say "too much diacetyl". It should be up to the brewer to know what this is. Sadly there is nothing else here to work with. In the final comments, the judge is stuck in diacetyl-land and can pull nothing else out from this beer sans brilliant clarity and color. There has to be something else wrong to justify 20 points on this beer. What else is going on besides a flat head? I am also struggling with the penmanship. #2 American Premium Lager The judge covered a majority of points that I would look for with exception that I would attempt to be more explicit about what I observed. Were the hops spicy, herbaceous, piney, tobacco, or citrisy? Was the malt caramelly, grainy, or biscuit-like? Was the head lacy? #3 Oktoberfest In the appearance I note the size of the carbonation: large, modest, small, fine, and very fine. Each of these is an indication of the physical care that was taken with the production. A head can persist but is it loose or tight? Is it creamy? What color is the head? Does it lace? For stronger beers I note if its' leggy and to what degree. #4 Russian Imperial Stout Wine-like: does the judge mean "vinous"? If so then it is not derived from alcohol, but rather Kloeckere, Lactobacillus, Pediococcus or enteric bacteria, and can be enhanced from too much refined sugar. I'm confused. Maybe the judge is perceiving fusel aroma since fusels are derived from alcohol. Which is it? On appearance, can the highlights be denoted? What color is the head? Does it have carbonation and what size are the bubbles? Does it lace or is it leggy? Mouthfeel: "Medium to big." ;o) Sorry but there is a lot missing here in this description. What really is the weight here? Is it creamy, or with good carbonation? We should note is there is astringency and if so what type? Is it from hops or grains? Was it pleasant and well-married? Finally, there is not a lot said about the finish or mineralization. Does the beer finish clean and crisp, or does it have a lingering cloying over-sweetness, or possibly a resinous excessive bitter? Was it acidic as pale lagers should be, or was it acidic from dark grain additions and just poorly buffered? If the scoresheet examples are used strictly as a guide on how to navigate the exam for the sake of passing the exam ~ then fine; Time is not our friend and I could understand how this person could be. say a Certified Judge. In the competition environment, I would be much more critical in observation. But by the same token, I would be equally kind, positive and helpful in the potential solutions tendered. I believe the judge cited in these examples did a good job at that. You can plug in 4 grains and 3 hops. You can now put in grain types and SRM number as well as efficiency numbers(see the Data page - it is the little tab at the bottom of the "Main" page) . This lets you formulate all grain and extract recipes for all styles. You can also put in Kettle efficiency and see what it looks like charted (the Kettle tab). You can tell the spread sheet to create "Extreme" recipes by putting 120% in each of the ratio fields. I have also written a new spread sheet that takes a recipe and tells you what BJCP style category it fall under. You can enter 12 different grains and/or extract type and 6 different hop types. It take the range of a prameter and tells you where in that range your recipe will fall or if you are out side the range or not. It will also color the cell so you can get a quick visual of what styles your recipe might be entered into. It is called StyleFinder.xls. You need to have MS Excel to use these. Question: Steve, just to help me along, suppose the guidelines call for an OG of 1.045 to 1.055. 1) If my recipe indicated 1.060 OG, what would the red percentage show up as? 2) If my recipe indicated 1.050 OG, what would the green percentage show up as? 3) If my recipe indicated 1.040 OG, what would the yellow percentage show up as? Answer: The formula I used to calculate the percentages was - Ratio = (Calculated - Low end)/(High end - Low end) (High end - low end) is always positive If Calculated equals low end then Ratio is 0% (0) (Green) If Calculated equals high end then Ratio is 100% (1) (Green) If Calculated between High end and Low end then Ratio between 0% (0) and 100% (1) (Green) If Calculated is less than Low end Ratio is a negative value (Yellow) If Calculated is more than High end Ratio is a value over 100% (greater than 1) (red) So for a guideline with 1.055 = High end and 1.045 = low end (High end - Low end) is 0.010 If Calculated = 1.060 then we have 1.060 - 1.045 = 0.015 which implies 0.015/0.010 = 1.5 The cell will read 150% and be colored red. If Calculated = 1.050 then we have 1.050 - 1.045 = 0.005 which implies 0.005/0.010 = 0.5 (50%) The cell will read 50% and be colored green. After some long contemplation, I feel compelled to provide critique on the BJCP scoresheets, especially if this is how the powers that be consider this an effective example of the way to describe beer. Preamble: When I judge a beer, I note everything that I can get: good, bad or otherwise. In this manner I can pick up a score sheet months or years from now and "know" what that beer was all about. This implies that I have good comprehension of my palate and command of my descriptions. #1 APA On Aroma: Cut to the chase and just say "too much diacetyl". It should be up to the brewer to know what this is. Sadly there is nothing else here to work with. In the final comments, the judge is stuck in diacetyl-land and can pull nothing else out from this beer sans brilliant clarity and color. There has to be something else wrong to justify 20 points on this beer. What else is going on besides a flat head? I am also struggling with the penmanship. #2 American Premium Lager The judge covered a majority of points that I would look for with exception that I would attempt to be more explicit about what I observed. Were the hops spicy, herbaceous, piney, tobacco, or citrisy? Was the malt caramelly, grainy, or biscuit-like? Was the head lacy? #3 Oktoberfest In the appearance I note the size of the carbonation: large, modest, small, fine, and very fine. Each of these is an indication of the physical care that was taken with the production. A head can persist but is it loose or tight? Is it creamy? What color is the head? Does it lace? For stronger beers I note if its' leggy and to what degree. #4 Russian Imperial Stout Wine-like: does the judge mean "vinous"? If so then it is not derived from alcohol, but rather Kloeckere, Lactobacillus, Pediococcus or enteric bacteria, and can be enhanced from too much refined sugar. I'm confused. Maybe the judge is perceiving fusel aroma since fusels are derived from alcohol. Which is it? On appearance, can the highlights be denoted? What color is the head? Does it have carbonation and what size are the bubbles? Does it lace or is it leggy? Mouthfeel: "Medium to big." ;o) Sorry but there is a lot missing here in this description. What really is the weight here? Is it creamy, or with good carbonation? We should note is there is astringency and if so what type? Is it from hops or grains? Was it pleasant and well-married? Finally, there is not a lot said about the finish or mineralization. Does the beer finish clean and crisp, or does it have a lingering cloying over-sweetness, or possibly a resinous excessive bitter? Was it acidic as pale lagers should be, or was it acidic from dark grain additions and just poorly buffered? If the scoresheet examples are used strictly as a guide on how to navigate the exam for the sake of passing the exam ~ then fine; Time is not our friend and I could understand how this person could be. say a Certified Judge. In the competition environment, I would be much more critical in observation. But by the same token, I would be equally kind, positive and helpful in the potential solutions tendered. I believe the judge cited in these examples did a good job at that. As one of my first actions as President, I would like to thank my predecessor for his service to the BJCP. William R. Slack served as President (and Treasurer) of the BJCP for over five years. He was the second person to fill that office, and he presided over the BJCP Board of Directors during some very significant changes for the organization, including: - the increasing use of on-line functions and services, and the concurrent move toward a paperless operation, - improvements to the judge database, - creation of the positions of Communication Director and IT Director, - new style guidelines and AHA adoption of the BJCP guidelines, - closer relationship with the AHA, - the promotion of people to the Grand Master Judge level, - BJCP points for judging at qualifying commercial beer competitions such as the GABF, and - provisions for grants from our treasury. During Bill's tenure, the BJCP has grown -- more exams given, more judges, more competitions. There are currently around 2000 active BJCP judges. The Extreme Homebrew Competition ** The competition is scheduled for October 4, 2003 at Bear Creek Brewing Company in Redmond Washington, and is AHA/BJCP sanctioned. Entries will be accepted from Sept 12-28th at various homebrew shops in the Seattle area.
