For instance a Bitter that clocks in at 1.041 when the guidelines call for a maximum SG of 1.038? The slightly stronger beer should taste better and potentially mask some flaws. Do judges in the AHA contest see recipes? Would an ordinary bitter be kicked up to Special Bitter? What about a Bock at 1.060 when it should be 1.068? Not that I am speaking from personal experience. :>) I ask this as I try to formulate recipes for myself that I also might enter............We have to balance what we like with what the guidelines call for.
