For the record, I prefer judging on Saturdays over Sundays if out of town because of travel considerations if an overnight stay is required or advisable. As for religious reasons, it might be your Sabbath and it might not be. Religious considerations (I am a Methodist) don't cause me to decide _not_ to judge (at all) on a Sunday, *BUT* I do appreciate the courtesy of a late enough starting time to allow me to go to morning worship service, so consider not using the same early 9am start time you might typically use on a Saturday.
