Jacksons Beer Companion lists it at 4.6% which is closer to what I recall. (and this book is from 93/94). The bottle Ive read closley and does list caramalz and roast malz as George reports. Its certainly not all Munich malt, Ive brewed over 10, 1 BBL pilots over the last few years using percentages between 35% Munich to 99.5% Munich with the balance pils and/or Carafa. While I can get to 79% ADA by mashing at low temp the beer ends up much too full in palate for the real Uerige taste. Ive also been in contact with a noted beer hunter who also is fluent in German and was just at Uerige last Oct. He did tour and speak with the brewer/brewmaster and also reports a good deal of caramalzs and pils. Now an interesting question is what type of caramalz. Tomorrow nite I plan on sharing Uerige Alt and Sticke that a good friend just brought back, will check the labels again. Will be interesting to try this again with the Dusseldorfer yeast and a grist closer to that listed on the bottle of Uerige. BTW, one recipe listed in Dornbusch's book is from Schumacher and calls for all Munich malt but at a lower lovibond than is typical for Munchener light. Prost!
