Most small to medium competitions, and some large ones, seem to have migrated successfully to the use of two bottles. As Greg points out, we can keep 1/2 bottle for a taste-off; cap and cool. At least all the beers are being treated equally. However, when competitions get very large or you have categories with three or more flights, then 1/2 bottle doesn't go very far in trying to perform a successful taste off. The Buzz Off 450+ had stayed with two bottles until we became a MCAB Qualifying Event at which time we went to three bottles. Yes, logistics of handling this many bottles was more difficult. But because there were categories, selected by the MCAB, that attracted lots of entries, having three bottles made life a lot easier for the judges and organizer. First round judges could sample as much as they liked since they didn't need to keep part of the bottle. Stewards got to sample all the beers, not just the ones that the judges weren't saving for a second round. Judges for the second round got plenty of beer from fresh bottles to sample. The benefits more than made up for the difficulties of handling more bottles. And we've developed some processes for boxing and labeling cases that make this relatively painless. Having a cold room to store the cases and work out of is a necessity...I can't imagine using coolers for all this beer as we exceeded 500 entries...greater than 1500 bottles of beer on the wall, 1500 bottles of beer, take one down...
