I don't consider it heresy, but I do think that is an overly simplistic view. What of bocks and doppelbocks? I thought German law determined what those are precisely because of gravity? I think one would have to admit that there are at least *some* occassions when style guidelines deserve closer adherence. - --gk Greg Kushmerek ------------------------------ From: Norman Dickenson Date: Tue, 10 Mar 1998 09:07:31 -0800 Subject: Disqualifications? >> Brewers know whether they are in style with the OG readings. A few >> disqualifications from major contests would shape up the craft. Since I am an amateur, I'd prefer to refer to homebrewing as a hobby. And how many professional craft brewer cares one iota about "our" style definitions? They brew to sell beer that is well received by the public, and they call it what they want. This is evolution in action. Joel commented: > This may be viewed as heresy by some, but I always thought they >were called style *guidelines* because they weren't set in stone. >They guide, they don't dictate. BINGO! It is refreshing to know that there are still rational, reasonable folks who brew and judge because it is fun, not to adhere to a dogma. Independent thought survives yet another assault ;>) Norman Dickenson ------------------------------ From: "Roger Deschner " Date: Tue, 10 Mar 1998 12:08:07 CST Subject: Re: Too Big Beers This is SO simple. JUDGES: Your job is to learn the guidelines about gravity and bitterness for each style, and do enough judging to train your palate to detect when a beer is seriously over or under the line on either gravity or bitterness, (or any other relevant characteristic), being aware that over or under attenuation can make determination of Original Gravity more difficult, and GIVE IT A LOWER SCORE. Write on the scoresheet that you are downrating it because it is beyond the style guidelines. DO YOUR JOB! But who are the guidelines for, the judges or the brewers? If you enter a beer that is out of style don't you expect to lose a few points? If you enter a bock as a dunkel wouldn't you expect to receive a low score and not win anything? The two beers are very similar the dunkel and the bock. If I said that a beer should be disqualified I stand corrected I believe that I said that a beer which is too big for the style shouldn't win. I also think that if the brewer knows that the beer is out of style why enter it? If the brewer doesn't understand that the entry is too big for the style shouldn't we educate the brewer that the entry is out of style and why? Tom Pope said: "However, I do not think a judge could state that a beer must have been too big only after looking at the grain bill and calculating maximum theoretical yield." One of the requirements of the recipe is to include the original gravity. If the original gravity is above the guideline then you have a pretty good indication that the beer exceeds the guideline. So a few brewers lie, big deal so does the president and the congressmen. Most of the recipes given are correct, based on the ability of the brewer. I feel that it is unfair to think that all the recipes given are a lie.
