No offence but in actual practice, I have not found "real life" scoresheets in general, to be so richly commented as the examples. Are these meant to be examples of how to fill out exam scoresheets, or how to fill out "in the trenches" ones? I did a quick scan of about 30 or so "live competition" sheets and there was not one that was as detailed. I think the quantity stems from the fact that in many competitions there is nowhere near 15 min. (implied above as tight) per entry and with miniBOS and 12 entries per flight, you gotta be faster or someone literally eats your lunch :) So I think a statement as to what these actually represent would help newcomers understand the double standard, ideal vs practice. Now I've gone on the back page of the scoresheet when I really thought it would help the brewer and I was confident of what I was saying, but this seems a rarity. More judges per competition would help bring this into line but thats not the case at this point. As an aside, I would like to suggest that in the section (appearance) where haze can be reduced by adding irish moss to aid flocculation, that possibly we differentiate yeast from protein by using coagulate for protein and flocculate for yeast. I know this flys in the face of Dave's terminology but other sources seem to match these better, and at first I was confused because I have not noticed any effect of seaweed on yeast flock times. Maybe this point is just me. First, the perception of banana aroma/flavor is caused by iso-amylacetate. This compound is an ester. The clove-like characteristic found in some beers is caused by 4-vinyl guiacol. This compound is a phenol. "Banana phenolics" and "estery cloviness" don't exist. A mash rest at 44C (111F) will create free ferulic acid, which yeast metabolize to 4-vinyl guiacol. A mash rest at this temp does NOT effect ester content of the beer (as far as modern brewing science knows). The second point has to do with the purpose of wort boiling. This is always question 1.b. on the BJCP exam (List the 5 purposes of wort boiling). Darkening the wort is NOT a purpose of wort boiling. Rather, it is a side-effect. In most beers, this darkening is not desired at all. In very dark beers, the brewer might want some color pick-up during the boil, but usually won't rely on it (dark malts will be used instead). Judge Digest #1530 had messages from Louis Bonham and Scott Bickham mentioning the BJCP style guidelines. Currently, the 1998 guidelines have not been released. Have there been changes worth noting? The answer may be significant both to organizers of upcoming competitions and to potential entrants. Brewers would be interested in specification changes, while organizers would benefit from knowing about potential catgeory and subcategory shifts. This would seem to be especially relevant for the MCAB, since the first two qualifying competitions are coming up fast. This BJCP and AHA registered competition is the first of three annual competitions leading to the North Carolina Homebrewer of the Year award. It will again be held at the BB&Y Restaurant in Raleigh, NC. Entries will be accepted in all 1998 AHA categories except Cider.
