The answer is really the same as you judge them in their category. If it's a classic style then how well does the beer represent the style. Is the specialty ingredient(s) prominent in aroma and flavor? The key to any of these beers is really BALANCE. Too much ginger does not make a better ginger beer. Does the special ingredients blend well with the base beer, the malt and the hops? The NHC BOS winner this year was a toasted coconut porter that was superly balanced. I judged this in the second round and was quite satisfied when the BOS team picked it as the BOS winner. Balance is the key to specialty beers IMHO.
