We are a qualifying event for the MCAB and expect to have well over 500 entries. In addition to the competition itself there will also be a professional brewers forum held on Sat afternoon with Bill Covaleski and Ron Barchet. Also later on Sat night will be a brewery loop connecting all the brewpubs in Chester and Montgomery counties. At the end of the competition Victory will be hosting a beer dinner. Of course, DMS is necessary to malt flavor, and in some styles is allowable at levels high enough to be identified. My question is how much is OK? I have learned that I am fairly sensitive to DMS. Because of this, I don't feel entirely comfortable telling somebody there is too much in their beer, especially if it's a pilsner or other light lager. As an example, I have found Brooklyn Brewery's Pilsner (draft version) to be pretty corn-like. To me it seems like it may cross the line of "acceptable" DMS, but having never had a fresh Pilsner Urquell, I don't know. I perceive it as having more DMS than Spaten Pils, or the Victory Prima Pils. Some of my friends perceive it as "sulfury," but not distinctly corn-like. Has anybody out there that had a wide range of Pilsners, including Brooklyn's? Your perceptions may be useful to me. Have fun! Johnston" Subject: Exam Beers First I'd like to extend a profuse, exuberant, and volumous THANK YOU to the HBD folks for filling in the unfortunate void of a BJCP dedicated forum. I'm looking for a little feedback from those who dictate exam policies/guidelines, as well as those proctoring exams both past and future. Having graded a few rounds of exams, I am curious what guidelines are provided to proctors regarding the beers to be judged by the examinees. While I agree that, in general, homebrew should be used, I am also of a mind that at least one beer should be a ringer -- i.e.: a flawless commercial example. I'm not necessarily saying that it has to be judged in its own substyle. For example offer a draft Guinness as a sweet stout, or Pilsner Urquell as a Munich Helles. I suggest this because, as a grader, I am bound to evaluating the tasters based upon the proctors comments. While flaws in beers are usually well defined, subtleties of style definition are more difficult to evaluate based upon comments only. By using mainstream commercial examples for at least one beer, the graders can evaluate comments based upon a known commodity. Obviously the beers would have to be nationally available, well known examples of a particular style.
