Just to stir the brewpot a little, however, consider an English Old Ale. While this is a rather broad category, I think the recipe would produce a beer not too unlike Theakston's Old Peculiar, a personal favorite. It is an example near the low end of the OG scale (1.050-1.080) and high end of the color scale (copper to deep red) for the category. The aroma hops may be a bit high, but bittering should be right on. The mollases and brown sugar would contribute to body and sweetness appropriate in an Old Ale. Michael R. In the real world of judging, many judges assign a score and then figure out how to justify that score on the scoresheet. Unfortunately they often use inappropriate ways to do that because they don't have the vocabulary and sophistication to explain why the beer didn't taste good to them. FWIW, while I can't provide the citation, included in a book or article out there somewhere is a discussion of the color of IPA in which it is discussed that the lighter color is the standard. >A most extreme case of current commercial practice ocurred at the Calif. >State Club Competion. Several years ago the AHA NC 1st round was held in the tap room of The Anchor Brewery and I served on the California Common panel. One beer in particular was so vastly superior to all others and sooooo good that I gave it a score of 49 (1 point off for arrogance). After each of us judges scored the beer, the discussion of adherence to style led us to ask the steward to bring us samples of Anchor Steam Beer from the bar tap which was quite fresh (the beer, not the tap:>) We determined that the competition beer was superior to Anchor Steam Beer! I found out later that this beer, which was brewed by a well known beer author and shop owner in N. California, got trashed in the finals. >And, yes, I am aware that folks have been judging Cal. Brewers as the representative hop of this style. Since no one has been able to publish historical recipes from the olden days, all we have to define this style is Anchor Steam Beer. While I am sure there are some who would like to impale my heart with a stake for saying so, I see Anchor Steam beer as a variation of American Pale Ale, which IMHO is far too narrowly defined by using Sierra Nevada as the paragon example. The bigger this brewery has gotten, the more dumbed down SNPA has become. You should have had it 10 years ago! Similarily, fresh draft Anchor Steam Beer is a real delight. Pasteurized, bottled and aged ASB is not! Flame suite is on.
