One of our members got the NW Malting "sample kit", which includes little bags of some 40 malts. I don't think we'll be going through all of them, though. :-) I'm thinking about putting together a "flavor profile" sheet so we can try to capture some "real data". It would ask for a rating (0-10, 1-5, or some such scale) for each of a number of flavor (aroma?) components, such as sweet, toasted, roasted, bitter, burnt, etc. Of course, many of these terms are quite subjective (i.e., toasted vs roasted), but I have hopes that some useful consensus might result. My main question at this point is: what flavor descriptors should I use? There will also be a blank for "comments" (e.g. to record "raisins!" for Special B), so the list should not be exhaustive. But I would like to cover the flavors commonly found in malts. My opinion follows. I am probably oversimplifying. A typical Scottish Export will be very malty, with some diacetyl present, and no hop flavor or aroma. It should scream "MALT!" at you. Also, some of the color in a Scottish ale comes from roasted barley, which may be the origin of the "faint smoky character". A Brown will typically have a higher hopping level with some hop character, not as much malt, and no diacetyl. I had it in Dallas, where it is apparently being introduced. It has a good golden color, is thick, moderately (but not sufficiently) smooth, and somewhat alcoholic. They appear to NOT be pitching it against "Bud Ice" etc, but are shooting for a higher target. For this they are to be commended. I would have to downrate it because of a certain "house harshness" that reminds me of Coors' other products, and because it is probably lower in alcohol. I think they have a mashing problem, or perhaps they are not really using a freezing process to condense it. But at least it's an effort, and while not a bulls-eye, they have hit the dartboard. I know nothing of its process, but in three short weeks we'll all be in Colorado and we can find out these things. If information is not forthcoming at the AHA conference, we can go to Golden to do firsthand research, although I bet Coors reps will be in attendance. I also bet we'll be able to sample it, either at the conference, or at the festival in Fort Collins. Curiously, it is labeled as a "Stout", and the word "beer" does not appear anywhere on the label. Presumably this is becaue of Texas' arcane alcoholic beverage labeling laws, and this would imply that it has a higher alcohol content than would be legal for anything called "beer".
