Perhaps, as > you say, "none to medium" *is* more correct. What does the Judgenet > think about this? > I think it fair to assume that Brettanomyces was a characteristic of *all* early British ales, not just porter. DeClerq refers to it very specifically as the source of characteristic fruitiness in British ales: "The presence of certain so-called wild yeasts is essential for certain types of beer: species of Brettanomyces, which are non-sporulating yeasts, have the power of oxidizing acetic acid and alcohol in the presence of oxygen and also form aromatic esters which are essential for the production of the characteristic bouquet of British ales and stouts and for Lambic beer." vol 1, p 391. Without *mandating* Brett, I would certainly like to see an attempt to encourage such experimentation by homebrewers. - --Jeff ------------------------------ Date: 27 Apr 1994 07:37:59 -0800 From: "Rad Equipment" Subject: Exam Questions Subject: Exam Questions Time:7:35 AM Date:4/27/94 Frank Dobner asks if it is ethical to pass along BJCP exam questions. Not only is it ethical, if you ask the BJCP Administrator you can get a copy of ALL the questions currently in the pool for exams. The BJCC decided to make the questions public last year. What you don't know is which questions will be on the particular exam that you take. RW...
